What Are We Famous For . . .

The other day in the tasting room, one of our guests at the winery asked me "What wine is JARVIS famous for?" And without blinking an eye, I said it has to be Cabernet Sauvignon, the "King of Wines".

A product of the spontaneous mating in the dim past of Cabernet Franc and Sauvignon Blanc, Cabernet Sauvignon is considered the noblest of all varietals because of its intensity of flavor, complexity of tannins and ability to age gracefully.

As a varietal, Cabernet Sauvignon generally has smaller berries, resulting in a higher skin to juice ratio. This is beneficial as the skin contributes all of the color and most all the flavor in a wine. The skins include the tannins which gives wine its structure for aging. When allowed to ripen to perfection, Cabernet Sauvignon's rich color and flavor combine with optimal tannin structure resulting in a flavor intense wine.

Other varietals such as Cabernet Franc, Merlot and Petit Verdot are often blended with Cabernet Sauvignon to soften the wine and raise the aroma. Winemakers in California can blend up to 25% of other varietals into their Cabernet Sauvignon and still call it a "Cabernet Sauvignon". Here at JARVIS our "Cabernet Sauvignon" is just that....100% Cabernet Sauvignon, the "King of Wines" at its greatest. We separately make a popular blend called Lake William which includes other varietals.
