Dimitri's Notes on Harvest 1997
1997-12-01

An extreme burst of heat mid-way through the summer was followed by a more temperate end to season which gave our fruit the hang-time it needed for our characteristic flavor intensity.

All of our grapes were in the winery within a 21 day period, making 1997 the fastest harvest on record at JARVIS. Merlot was the first to arrive at the winery this year, and was fermented in our new 5 ton rotary fermentor. We are looking forward to this being a flavor blockbuster!
