Why So Many Cuve Tanks?

For those of you who’ve visited the winery, you surely remember rounding the corner and seeing the long row of French Oak cuves (tanks). In the cuve gallery we have 12 cuves ranging in size from 750 gallons to 2,000 gallons. After fermentation, our wines are moved into these upright oak cuves to minimize contact with stainless steel. During the periods of time for wine settling, for blending, or for additions we store our wine in our Radoux cuves rather than stainless tanks, so as to minimize the possibility of the wine developing mercaptans which detract from the wines naturally fruity flavor.

The staves for these large cuves were produced by Radoux in France, they arrived in numbered bundles, and were assembled on the spot by Radoux coopers.
